Armando al Pantheon

Tiny, family-run trattoria steps from the Pantheon, run by the Gargioli family since 1961. Despite its prime location, this is no tourist trap — it's where Romans go for textbook traditional cooking. The lamb's heart and liver coratella, served on a bun with spicy chicory, is a signature. Pasta courses, especially carbonara and the daily gnocchi specials, are excellent. The dining room is small and intimate, with art covering the walls. Reservations open exactly one month in advance via their website and disappear within hours.
