Diego Vitagliano is ranked #2 in Italy by Top 50 Pizza 2025 and holds 3 Gambero Rosso forks. His Coppedè location (opened October 2025, replacing the closed Corso Francia branch) is the most accessible for visitors. Neapolitan dough with 36-hour leavening, organic type-1 flour, very low salt — genuinely light and digestible. Two large electric ovens modelled on wood-fired design are visible from the dining room. The frittatina di spaghetti aglio e olio won the Top 50 Pizza 2025 Best Pasta Fritta award. Dedicated gluten-free area with separate forno. Both classic margherita and creative croccante (alla pala) styles served. Sommelier for wine pairings. Large space: ~150 indoor seats + 40 external. The elegant Coppedè neighbourhood with its art nouveau architecture adds to the experience.
