Bonci Pizzarium

Gabriele Bonci's legendary pizza al taglio shop near the Cipro metro stop, often credited as the spot that elevated Roman by-the-slice pizza into an art form. Long-fermented dough produces a crisp-yet-airy base; toppings are creative and seasonal — porcini and pumpkin in autumn, anchovies and bottarga in summer, baked egg with potato classics year-round. Slices are sold by weight, cut with scissors. No seating; benches and platforms outside. Expect a queue but it moves fast.
