Culinary historians believe Pasticceria Boccione (also known as Il Forno del Ghetto) is the oldest bakery in Rome, possibly dating to 1815. Run by two sisters behind a tiny counter in the Jewish Ghetto, the shop is smaller than a walk-in closet. Their invention — the crostata di ricotta e visciole (ricotta and wild cherry tart, originally created to hide the cheese layer from inspectors) — is now one of the most beloved pastries in Rome. Also remarkable: the pizza ebraica (sweet bread with candied fruit and toasted nuts). Cracks and charred edges are deliberate.
