Founded in 1887 directly across from the Testaccio slaughterhouse (which closed in 1975), Checchino is the historic source of Rome's quinto quarto (offal) tradition. Now run by the fifth generation of the same family in the same building, it's a more refined, almost formal version of Roman cooking. The wine cellar dug into Monte Testaccio is extraordinary. Excellent for special occasions; not cheap but historically resonant.
