Invented by Stefano Callegari (also behind Sforno, Sbanco, and Tonda), the trapizzino is a triangular pocket of soft pizza bianca dough folded around Roman fillings — tongue in salsa verde, braised oxtail alla vaccinara, chicken cacciatore, meatballs in sauce. The Piazza Trilussa location is The Winery: a curated Lazio wine list makes it far more than a fast-food stop. Sit at the counter, order a glass of Cesanese, and eat two or three trapizzini. Five permanent classics rotate with seasonal specials. The supplì here are also excellent. A genuine Roman street food invention now with branches in Rome, Milan, Florence, and New York — but the Trastevere original remains the most atmospheric. Open until midnight every day.
