Pinsere

A small specialist serving pinsa romana — the ancient Roman ancestor of pizza, made with a different flour blend (wheat, soy, rice) producing a lighter, crispier base. Topping combinations like mortadella-pistachio and prosciutto-mozzarella are simple and excellent. The dough is hand-stretched into elongated oval shapes. Closed weekends. A favourite of the Roman office crowd at lunch.
