A quarter-century-old Trastevere institution whose founders studied fluid dynamics, chemistry, and artificial intelligence to perfect a two-ingredient gelato formula. The gelato is made with exceptional ingredients and technique. Famous for outstanding tart flavours (yogurt, fruit sorbets) and creative combinations (chocolate + Sichuan pepper).
